Thai Coconut Prawns

Made these the night of our Myanmar slideshow and they were an absolute hit! Here's one of the shots from the slideshow...

Here's the recipe:

1-2lbs prawns
1/2 c dried coconut
1/2 c flour
1-2 tbsp butter
1-2 eggs
Salt and pepper

2-4 cloves of garlic
1-2 tsp samba olek sauce
3 tbsp soya sauce
1-2 tbsp lime juice

What cha do:
Marinade the prawns for at least 1hr. Place the coconut and flour in a bowl with salt and pepper. Place eggs in a bowl, mixed. Butter cookie sheet for baking. When ready, begin dipping prawns one at a time in egg followed by flour coconut mixture and place on pan. Bake for 2-3 mins and then flip, bake another few minutes or until prawns are cooked and nicely browned. Serve with Thai sweet chili  sauce. Enjoy!
