Nic's Fabulous Fish Tacos

Had a few requests for this recipe, will try and get some visuals up soon!

Ingredients: 


1 C quinoa
2 C shredded carrotts
2-3 medium sized tomatoes
1-2 avocadoes
1/4 C chopped cilantro (or another fresh herb you like)
1/2 C chopped greens (optional)
1/4 C chopped red onion (optional)
1/2 fresh lime
2-4 basa filets (or feel free to use another type of white fish)
1 medium yellow onion, chopped
4-6 Tbsp rice vinegar
1-2 Tbsp soya sauce
5-7  Tbsp sesame oil
1-2 Tbsp ground cumin (for added flavor you can roast and grind your own whole cumin)

What cha do:

Cook the quinoa and set aside to cool in a large bowl, once cooled add rice vinegar and 3-4 tbsp sesame oil. Shred carrots, chop tomatoes, onion, avocadoes and greens and mix in to quinoa. Warm a medium sized sauce pan, add 1-2 tbsp sesame oil and begin to fry the onions. Fry for 3 mins, add fish on top of onions along with cumin and soya sauce. Place lid on pan to let fish steam cook for 2-5mins. Once cooked, remove fish from heat and let cool. Once cooled mix fish into quinoa and veggies. Squeeze fresh lime on top and add salt and pepper to taste. Serve with nacho chips, or crisp tortilla wraps. Enjoy!
